
Who would have guessed that chicken fajitas can be so easy to make using only the spices that you already have in your cupboard? These Easy Chicken Fajitas are absolutely gorgeous. They are a regular favourite in our house and the Homemade Spice Mix tastes easily as good as anything you’d buy in a restaurant, with none of the artificial additives.

What can I serve these fajitas with?
Tex-Mex style food has always gone down well in our house and therefore becomes a bit of a weekend treat for us. There’s something about serving food that has a number of different sides that makes it that bit more special.

We love this served in wraps or with rice on the side. I also serve it with sides of guacamole, grated cheddar, and tortilla chips and put out some jalapeno chillies, sliced red onion, chopped coriander, and a quartered lime for squeezing over the top of everything.
However, if you want a quick mid-week meal you can serve this as a simple fajita with no sides, or with plain rice on the side, and it will still disappear in a flash. Feel free to mix things up as you like.
Can’t get your kids to eat avocado?
I love guacamole and eat piles of it. It’s so easy to make that I’ve never bought ready-made. I’ll be posting the recipe for it really soon. If you’ve tried your children with guacamole and can’t get them to eat it, try them with the Avocado Lime Dressing that I serve with my Chicken Fajita Salad. My youngest loves it, she’d eat it every day. And it’s green, so you could come up for some fancy name that would sell it to them!

Can I use any other meat?
Absolutely. Thinly sliced steak or left-over roast chicken would work well here. These meats would take less cooking/heating however, so add the meat to the pan when the onion and peppers are nearly cooked. If you’re using left over chicken, make sure it is piping hot before you serve it.

Easy Chicken Fajitas with Homemade Spice Mix
Ingredients
For the spices
- 1½ teaspoons smoked paprika*
- 1½ teaspoons cumin
- 1½ teaspoons coriander
- 1½ teaspoons oregano
- 1½ teaspoons garlic powder
- 1½ teaspoons onion powder
For the chicken
- 2 tablespoons cooking oil
- 5 chicken thighs (sliced)
- 3 large onions (sliced)
- 3 peppers (sliced)
- ½ teaspoon salt
To serve
- Soft tortillas or rice
- Guacamole (optional but gorgeous)
- Tortilla chips, grated cheddar, lime, fresh coriander, sliced red onion, jalapeno chillies (all optional)
Instructions
- Mix the spices together.
- Cook the spices, chicken, onions and peppers in a large non-stick frying pan over a high heat until the chicken is cooked through and the onion is soft.
- Serve.

Today I will make Chicken Fajitas. And as I prefer spicy food, I will make Chicken Fajitas with a spicier taste.
Spicier sounds like a good plan! If you love it then why not?!
I used to use packet mixes when I made fajitas but now much prefer making the spice mix myself so I can adjust the spice. Yours sounds delicious.
