
Easy and healthy, with crispy, sticky chicken and caramelised onions and peppers, this Piri Piri Chicken TrayBake is the perfect recipe to have up your sleeve. Add in the Sweet Potato Wedges and you have a complete meal that is perfect for mid-week or the weekend.

I first made this traybake years ago and it has always been one of my favourites so decided it was high time I share it with you! What I love so much is that you simply toss the ingredients together, pop it in the oven and 45 minutes later dinner is served.

I love this chicken served with the sweet potato wedges, it goes so well. If I have time I also serve my Avocado Lime Dressing alongside. It’s a match made in heaven and a brilliant way to get veg into people without them realising!

Piri Piri Chicken Traybake with Sweet Potato Wedges
Ingredients
For the chicken
- 4 chicken drumsticks
- 4 chicken thighs
- 4 peppers (diced)
- 2 onions (peeled and cut into wedges)
- 1 tablespoon cooking oil
- 1½ teaspoons ground coriander
- 1 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 3 cloves garlic (crushed)
- ½ lemon (zest of)
- Salt to taste
For the sweet potato wedges
- 2 large sweet potatoes
- 1 tablespoon cooking oil
- ½ teaspoon salt
Instructions
- Pre-heat the oven to 200°C (390F).
For the chicken
- Toss all the ingredients together and place in a non-stick oven dish.
- Place in the oven and bake for 45 minutes or until the chicken is cooked.
For the sweet potato wedges
- Cut the sweet potatoes into chunky wedges. Place on 2 baking sheets, add the oil and salt and toss.
- Place in the oven along with the chicken. Cook for 45 minutes or until the wedges are soft and the edges are slightly caramelised.

Living in portugal we eat piri piri often, but usually just on a whole chicken. This recipe is a great way to enjoy the taste and so easy to make. Mine didn’t look as good as your photo, but still tasted fantastic

This looks absolutely incredible – I love piri piri chicken so much! I assume you can substitute regular potato for the sweet potato? I’m not a massive fan of sweet potato somehow, but otherwise, this is a perfect meal for me!
