  • 1 tablespoon cooking oil
  • 1 onion (finely diced)
  • 1 large clove garlic (crushed)
  • ½ teaspoon oregano
  • 500 g beef mince
  • 1 teaspoon sweet smoked paprika (pimenton)
  • 500 ml passata
  • 1 stock cube dissolved in 100ml boiling water*
  • teaspoons sugar/maple syrup (optional)
  • Salt and pepper
  • 2 teaspoons corn flour**

To serve:

  • Pasta or low carb alternative

  • Gently fry the onion, garlic and oregano for a few minutes until the onion is softening. Add the beef mince and stir-fry until the beef mince is brown, breaking it up as it cooks.
  • Add the remaining ingredients except the salt, pepper and corn flour. Stir well and simmer gently for at least ten minutes and up to 1 hour – just ensure it doesn’t dry out.
  • Season to taste. If necessary, mix the corn flour with two to three teaspoons of water and stir into the bolognese. Simmer for a further two minutes.
  • Serve.

*If Whole30 or paleo, check the ingredients. Use gluten free if necessary
