Easy and healthy, with crispy, sticky chicken and caramelised vegetables, this Piri Piri Chicken TrayBake with Sweet Potato Wedges is the perfect recipe for a busy evening. Simply toss the ingredients together, pop them in the oven and leave to cook!

Ingredients

For the chicken

  • 4 chicken drumsticks
  • 4 chicken thighs
  • 4 peppers (diced)
  • 2 onions (peeled and cut into wedges)
  • 1 tablespoon cooking oil
  • teaspoons ground coriander
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 3 cloves garlic (crushed)
  • ½ lemon (zest of)
  • Salt to taste

For the sweet potato wedges

  • 2 large sweet potatoes
  • 1 tablespoon cooking oil
  • ½ teaspoon salt

Instructions

  • Pre-heat the oven to 200°C (390F).

For the chicken

  • Toss all the ingredients together and place in a non-stick oven dish.
  • Place in the oven and bake for 45 minutes or until the chicken is cooked.

For the sweet potato wedges

  • Cut the sweet potatoes into chunky wedges. Place on 2 baking sheets, add the oil and salt and toss. 
  • Place in the oven along with the chicken. Cook for 45 minutes or until the wedges are soft and the edges are slightly caramelised.
